One Chicken, Three Meals
Hey everyone! I’m Anne and for this week’s Culinista Challenge I decided to stretch a family favorite - baked chicken. We have baked chicken at least once every two weeks. Usually I make lemon pepper, but this time I changed it up a bit and seasoned everything with just a little bit of black pepper, garlic, dried onion, and parsley.
Tuesday - one-pan baked chicken with potatoes, green pepper, and onion. I think Stephen [my son] liked the fact that he had fewer dishes to wash that night.
Skip ahead to Thursday where I reinvented my chicken as a lovely stir fry complete with edamame, sugar snap peas, broccoli, carrots, water chestnuts, bean spouts, and rice.
And finally, today I made myself a personal favorite, an open-faced chicken sandwich with gravy. This brings back memories of open-faced turkey sandwiches with my mom on the Friday after Thanksgiving. We would have these around 9 am, after returning from all the early bird deal shopping we would do. =) Oh, and just so my lunch isn’t complete devoid of veggies I drank some V8 Fusion.
