Tarragon Times Three
I decided to go with fresh tarragon for this week’s herb challenge—I cook with herbs all the time, but they’re almost always dried, so I figured my challenge would be using something fresh. Since there was a good amount of tarragon in the package I purchased and I found a bunch of recipes I wanted to try, I used the herb in 3 different things.
1. Tortellini With Tarragon, Chives And Parsley with a side salad (okay, pile of lettuce) dressed in Tarragon Vinaigrette.


Both the dishes were good, but the herb didn’t seem any different from dried. Plus my knife skills are crappy, so the mincing of the tarragon wasn’t too pretty. Would I make the recipes again? Sure, but probably not with fresh tarragon.
