Outside the Box Challenge

From March 1-May 1, we're getting outside of our boxes to try new foods, exercises, and other healthy activities. Follow our progress as we post about how we're meeting each week's new challenge.

    Hi I’m Kelsey.  I’ve done all the challenges so far and had a blast.  I always thought it would be fun to do something like this.  The only problem with it was that it made the past weeks go by so fast, which I was not a fan of because I graduate from college in only a few more weeks.  I wanted the end to last forever. 
    Anyways, the hardest challenge was the Have a Little Herb test (though the No Sugar test was a close second).  Being a college student, I cook simple things and don’t use much herbs or spices.  I use cumin and red pepper often, but that’s about it.  I usually just by my pesto already made.  The easiest test was the Frontier Girl test.  I had been planning on make pancakes for dinner for awhile with my roommate and this pushed me to do it.  At home we always use box mixes to make pancakes, so making them from scratch was new and fun and tasty.  Plus, who doesn’t love pancakes for dessert! :)
