Outside the Box Challenge

From March 1-May 1, we're getting outside of our boxes to try new foods, exercises, and other healthy activities. Follow our progress as we post about how we're meeting each week's new challenge.

  • Looking Back…

    I cannot believe it’s the final week already, especially since when I started, nine weeks seemed to be such a long time, but it actually passed very quickly for me.

    I did not really find any of the challenges to be extremely difficult, but I guess the hardest one for me was The Culinista Test, simply because it was my first time making soup by myself.  It also took me about 30 minutes to chop up all of the vegetables I needed, because of course the day I decide to make soup, there aren’t any vegetables leftover from dinner the night before.  I haven’t made soup since then, but the challenge did make me think of how to cook food in order to have additional leftover for other nights, which saves me time when I work a closing shift.

    While I thought all of the challenges were relatively easy, the easiest challenge for me was definitely The Fantasy Fitness Test.  About a year ago, I found a link to a surf retreat and had bookmarked it, because as someone who has always been fascinated by surfing but can’t swim, it seemed like the dream vacation.  I just hope that at some point it will switch from being a fantasy workout vacation to an actual vacation :)
